Vegan Chocolate Beetroot Cake

Sweet, salty, crunchy, and fudgy — these Salted Caramel Pretzel Brownie Bars combine everything you crave in one irresistible treat. With layers of chewy brownie, crunchy pretzels, and gooey salted caramel, this recipe is the perfect balance of textures and flavors.
For the brownie layer:
1/2 cup (115g) unsalted butter
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup (40g) unsweetened cocoa powder
1/2 cup (65g) all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
For the caramel layer:
1/2 cup (120ml) heavy cream
1/2 cup (100g) brown sugar
2 tablespoons butter
1/2 teaspoon sea salt
1 teaspoon vanilla extract
For topping:
1 cup mini pretzels, roughly crushed
Extra sea salt for sprinkling (optional)
Prepare the brownie base:
Preheat your oven to 350°F (175°C) and line an 8x8-inch (20x20 cm) pan with parchment paper.
Melt butter in a saucepan or microwave, then stir in sugar, eggs, and vanilla.
Add cocoa powder, flour, salt, and baking powder. Stir until just combined.
Pour into the prepared pan and smooth the top.
Bake the brownie layer:
Bake for 20–22 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
Let it cool slightly while you prepare the caramel.
Make the salted caramel:
In a small saucepan, combine cream, brown sugar, butter, and salt.
Cook over medium heat, stirring constantly until it comes to a boil.
Let it simmer for 4–5 minutes until thickened, then remove from heat and stir in vanilla. Let cool slightly.
Assemble the bars:
Scatter the crushed pretzels over the brownie layer.
Drizzle the warm caramel over the top.
Sprinkle with a pinch of sea salt if desired.
Chill in the fridge for at least 1 hour before slicing into bars.
