For the tart crust:

  • 1 ¼ cups (160g) all-purpose flour

  • 1/4 cup (50g) granulated sugar

  • 1/2 cup (115g) unsalted butter, cold and cubed

  • 1 egg yolk

  • 2-3 tablespoons ice water

For the filling:

  • 1 cup (120g) walnuts, roughly chopped

  • 6 fresh figs, halved

  • 2 tablespoons honey

  • 1 tablespoon olive oil

  • 1 tablespoon fresh thyme (optional)

For the balsamic glaze:

  • 1/2 cup (120ml) balsamic vinegar

  • 1 tablespoon honey or sugar (optional)

  1. Prepare the tart crust:
    In a food processor, pulse flour and sugar together.
    Add cold butter and pulse until the mixture resembles coarse crumbs.
    Add egg yolk and ice water, then pulse until the dough begins to come together.
    Turn out the dough, form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

  2. Preheat oven:
    Preheat your oven to 375°F (190°C).

  3. Prepare the figs and walnuts:
    Toss the halved figs with honey, olive oil, and thyme (if using).
    Spread figs on a baking sheet and roast for 15-20 minutes, or until soft and caramelized.
    Toast walnuts in a separate pan for 5-7 minutes, until lightly browned and fragrant.

  4. Roll out the dough:
    Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
    Prick the bottom of the crust with a fork and bake for 10–12 minutes, or until lightly golden.

  5. Assemble the tart:
    Spread the toasted walnuts evenly on the baked tart crust.
    Arrange the roasted figs on top of the walnuts.

  6. Make the balsamic glaze:
    In a small saucepan, bring the balsamic vinegar and honey to a simmer over medium heat.
    Reduce for 5-7 minutes until it thickens into a glaze.
    Drizzle the glaze over the fig and walnut tart.

  7. Serve:
    Let the tart cool for 10 minutes before slicing. Serve warm or at room temperature.
