Vegan Chocolate Beetroot Cake

For the brownie base:
1/2 cup unsalted butter (melted)
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
For the Nutella swirl:
1/2 cup Nutella (or any hazelnut spread)
2 tablespoons milk (for thinning the Nutella)
Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan and line with parchment paper for easy removal.
Make the brownie batter:
In a large bowl, mix the melted butter and sugar. Beat in the eggs one at a time, then add the vanilla extract. Sift together cocoa powder, flour, salt, and baking powder, and fold into the wet ingredients until fully combined.
Prepare the Nutella swirl:
In a small microwave-safe bowl, heat the Nutella and milk for 20-30 seconds, stirring until smooth and pourable.
Assemble the brownies:
Pour the brownie batter into the prepared pan, spreading it evenly. Drop spoonfuls of the Nutella mixture on top and swirl gently with a knife or skewer for a marbled effect.
Bake:
Bake for 20–25 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs. Be careful not to overbake for that fudgy texture.
