Lemon Drizzle Cake That Melts in Your Mouth



📝 Ingredients:

For the cake:

  • 225g (1 cup) unsalted butter, softened

  • 225g (1 cup) granulated sugar

  • 4 large eggs

  • 225g (1¾ cups) self-raising flour

  • Zest of 1 large lemon

  • 1 tsp vanilla extract (optional)

For the drizzle:

  • Juice of 1½ lemons

  • 85g (⅓ cup) granulated sugar

👩‍🍳 Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and line a loaf tin with parchment paper.

  2. Cream the butter and sugar together in a large bowl until pale and fluffy.

  3. Add the eggs one at a time, beating well after each addition.

  4. Fold in the flour gradually, then add the lemon zest and vanilla extract (if using).

  5. Pour the mixture into the prepared tin and level the top with a spatula.

  6. Bake for 45–50 minutes, or until a skewer inserted into the center comes out clean.

  7. While the cake is baking, mix the lemon juice with the sugar to make the drizzle.

  8. As soon as the cake is out of the oven, poke small holes all over the top using a skewer.

  9. Pour the drizzle over the cake while it's still hot so it soaks in.

  10. Let the cake cool in the tin before removing. Slice and enjoy!
