  • 1 tsp sugar

  • 1 tsp instant yeast

  • ¾ cup warm water

  • 1 tbsp olive oil

  • 1 cup cooked chicken breast, shredded or diced

  • ½ cup BBQ sauce (plus extra for drizzle)

  • 200g (about 7 oz) mozzarella cheese, shredded

  • ½ red onion, thinly sliced

  • Fresh cilantro or parsley (for garnish)

  • Optional: smoked paprika or chili flakes for extra flavor

👨‍🍳 Instructions:

  1. Prepare the Dough:
    In a large bowl, mix flour, salt, sugar, and yeast. Add warm water and olive oil. Mix and knead for about 8–10 minutes until the dough becomes smooth and elastic.

  2. Let the Dough Rise:
    Cover the dough in a greased bowl and let it rise in a warm place for 1–2 hours until it doubles in size.

  3. Preheat the Oven:
    Preheat your oven to 250°C (480°F). If using a pizza stone, place it in the oven while heating.

  4. Prepare the Chicken:
    Mix the cooked chicken with BBQ sauce until coated. You can use rotisserie chicken or grilled chicken breast.

  5. Shape the Dough:
    Roll or stretch the dough into a circle or rectangle, about 10–12 inches wide. Place it on a baking tray or pizza stone dusted with flour or cornmeal.

  6. Assemble the Pizza:
    Spread a thin layer of BBQ sauce on the base instead of tomato sauce. Sprinkle mozzarella cheese evenly. Add the BBQ chicken, red onion slices, and a sprinkle of smoked paprika or chili flakes if desired.

  7. Bake:
    Bake for 8–10 minutes until the crust is golden and the cheese is melted and slightly browned.

  8. Finish and Serve:
    Remove from the oven. Drizzle a little more BBQ sauce on top, garnish with chopped cilantro or parsley, slice, and serve hot.
